Smoked Salmon Burnt Ends

Ingredients
* 1 ½ – 2 lbs salmon fillet
* 2 tsp olive oil
* 1 ½ tbsp Cajun Craze seasoning
* ¼ cup maple syrup
* 2–3 sprigs fresh thyme, chopped
* Cedar planks or wire rack (optional)
Instructions

Cut the Salmon – Slice salmon into bite-sized cubes, about ½ inch thick.
Season – Place cubes in a bowl, drizzle with olive oil, and toss with Cajun seasoning until coated.
Set Up for Cooking – Arrange cubes on cedar planks or a wire rack, leaving space between each piece.
Smoke or Roast – Cook at 225°F (107°C) using a smoker or oven. For added flavor, use apple or cherry wood.
Glaze – Once salmon reaches 130–135°F (55–57°C) internally, brush each cube with maple syrup.
Finish – Continue cooking until salmon hits 145°F (63°C) for perfect tenderness.
Garnish & Serve – Sprinkle with chopped thyme before serving warm.
