Huevos Rancheros for breakfast—fried eggs over warm tortillas, smothered in ranchero sauce, with crispy fried potatoes and thick-cut bacon on the side. A lot of work for one person, sure, but this is the meal my roommate would never touch. I’ve been craving it for weeks, and today I finally had the chance.
