


Went hunting in South Dakota with family and friends, brought some home!
In the sauce was bacon, βwild mushroomβ mix cranberries, spinach and heavy cream seasoned with garlic, cinnamon, sugar, oregano, corriander, salt and pepper
I brined the pheasant breasts for an hour then seared them in bacon fat and butter before tossing them in the oven at a low temp until 156f
Pan fried some parsnips in butter, cinnamon, and apple cider until caramelized
served with a side of rice
