Pizza night! This week’s special was a little different, with some new flavors, and it really worked. I started with my usual base of mozzarella, smoked scamorza, and grated Pecorino Romano. Then I added a sauce made of sweet chili sauce, soy sauce, rice wine vinegar, garlic powder, lime juice, and some other stuff. On top of that sautéed mushrooms, and thin sliced Vietnamese pork sausage made with lemon grass and ginger. Out of the oven finished with fresh scallions, cilantro, fried garlic and fried scallions. It was bright, bold, and punchy with lots of herby flavor and nice crunchy bits.
