
Peel ~4 big carrots into ribbons (this takes a while unfortunately, but it's worth it IMO). Add lots of rice vinegar, bits of green onions (optional), and about 1 tbsp each of soy sauce (I used one with less sodium), sweet chili sauce, and garlic chili crunch oil. Mix thoroughly.
Most of the calories come from the chili crunch oil but it's so good. One giant bowl of this is about 370 cals. So much fiber, really filling and crunchy and tangy. I only wish I could find a way to cut down on the prep time — just need to work on my technique!
