Dont knock goat until you try it. Afterall it is the most popular meat eaten all over the world.

This was delightful, the goat after being brined, was fried with onion and tomato paste, then braised with red wine and chicken broth and cooked until the meat started falling off of the bone.

Veggies (carrot, onion, celery, green pepper, potato, parsnip) were then boiled separately using a 1 to 2 ratio of water to the concentrated broth and everything added back in to the meat after it was deboned.

Only other seasonings are salt, pepper, thyme, and parsley.

Sourdough is from my starter. Very easy to keep going and the boule was nice and crunchy on the outside and soft on the inside. Perfect for soaking up the stew.
