    Salt brined the chicken in the fridge uncovered for 24 hours. Followed up with brushing the skin with a butter and olive oil mix.

    Potatoes put directly underneath and mixed with thinly sliced onions, crushed garlic, rosemary sprigs, and lemon slices.

    Bonus chimichurri and cucumber side salad to add a little herby-freshness to the whole dish.
