I highly recommend leaving the sauteed vegetables out of the pressure cooker step and letting them finish with the cream–along with the chicken–so they don’t shrink so much like this. It also adds quite a bit of water that isn’t really needed. Or maybe double the amount of carrots.
It was still fantastic–warm hug in a bowl, and *way* better and cheaper than Panera.
