  1. I put the recipie in Chat GPT, so sorry if the format is weird, I’m not sure how it should be done

    ·        5 lbs small yellow potatoes, cubed (skin on)

    ·        2 tbsp olive oil

    ·        1½ tsp kosher salt

    ·        1 tsp mustard powder

    ·        1 tsp dried dill weed

    ·        ¼ tsp cayenne pepper (adjust to taste)

    Aromatics

    ·        ½ sweet onion, finely chopped

    ·        1 tbsp minced garlic

    Mix-Ins

    ·        ½ lb bacon, cooked crispy and chopped

    ·        ¾ cup canned sweet corn (drained) or fresh roasted corn

    ·        2 tbsp sweet pickle relish

    ·        2–3 green onions, sliced thin (plus extra for garnish)

    Dressing

    ·        1 cup mayonnaise

    ·        1 tsp Dijon mustard

    ·        1 tsp yellow mustard

    ·        1 tbsp apple cider vinegar

    ·        1 tsp lemon zest

    ·        1 tbsp Tajín seasoning (adjust to taste)

    ·        ½ tbsp sugar (optional, for sweetness balance)

    ·        ¾–1 tbsp kosher salt (start low and adjust)

    ·        Freshly cracked black pepper

    ·        ½ tsp smoked paprika (optional)
