* 1 tablespoon taco seasoning
* 1 cup beef stock
* 2 white onions(one diced for topping & one quartered for braising)
* Lime wedges
* Cotija cheese
* Chopped cilantro for garnish

Directions
* Season your brisket on all sides with salt, pepper & taco seasoning
* Let that sit seasoned for at least 30 minutes
* Set your smoker or oven to 225 degrees
* Place your brisket in your smoker or oven till it reaches an internal temperature of 165-170 degrees
* Then pull your brisket off and place in a deep oven safe tray
* Add in your beef stock and 1 quartered onion and cover with aluminum foil
* Increase the heat on your oven or smoker 300 degrees
* Place your covered brisket back in your oven or smoker to allow it to braise
* Let this braise for at least an hour my beef became pull apart tender at an internal 205-208 degrees
* Once you remove the brisket, poke a few small holes in the aluminum foil to allow it to breathe while it rests. I rested this brisket for 45 minutes
* Shred all your beef to you desired consistency
* Place your beef on top of a toasted tortilla
* Top off with lime juice, cotija cheese, chopped cilantro & diced white onion
* You can get creative with toppings. That part is up to you!
