Once a week when I have a day off, I take a day out of my meal prep to experiment with a couple recipes I see online. This week the big experiments were biscuits and gravy with eggs, and the cottage cheese pizza crust!

I live in Canada, so biscuits and gravy with eggs are literally no where to be seen. I think the only place to get them where I live is Perkins. They’re one of my most favourite breakfasts ever and I definitely indulge when I visit my family in the states, but that’s maybe once every couple years. So I gave my hand at doing it myself, only a little lower cal! It’s orange in colour because I added hot honey seasoning to it. It was delicious!

For the pizza with the cottage cheese crust, it definitely hit the pizza cravings. It was a bit cracker-y, but I think this was because I used the Fibre Gourmet flour instead of regular flour. But it held up nonetheless. I think next time I’ll add some seasoning to the crust itself, maybe some garlic powder and Italian seasoning, maybe some more baking powder or active yeast to get a little rise to the crust.

Lunch was just a whole box of pre-packaged mussels from Loblaws and dessert was just blackberries blended with 0 cal syrup, topped with chocolate whipped cream and cocoa powder mixed with the syrup.

Next week I’m gonna retry the pizza crust, but I’m also gonna test out the beef and bananas that I keep seeing everywhere. For those that don’t know, it’s just beef sautéed with bananas seasoned with cinnamon, sounds strange but it looks really good so I’m gonna give it a go.
