
Did a bit of a long experiment. Spent 5 hours making 4 kinds of homemade pork sausage fillings and then wrapping 150 dumplings. 42 calories each if boiled or steamed. 57 calories if deep fried. Still need to try an air frying method next.
I started by deboning and grinding an entire pork shoulder. Then I made 4 flavor mix ins: Thai “funky” Sai Ua sausage, Chinese “spicy” Szechuan Mala sausage, Korean “sweet” bbq sausage, and Japanese “classic” gyoza filling. Then I made 150 dumplings and froze them on sheet trays and transferred to freezer bags.
They’ve been the perfect lunch option either steamed or pan fried. The wrapper is 20 calories of carbs and the filling is 22 calories of mostly protein. If fried, this adds about 1.73 grams of oil or 15.5 calories of fat. I came to this number by weighing the oil before and after frying so hopefully that was pretty accurate.
I was just looking for a way I could prepare them and take them to work. Saw that deep frying they could be left at room temperature for a day. Figured I’d give it a shot and was surprised they weren’t too much worse. These might not be an everyday choice for volume reasons, but 6 of these plus 6 oz of rice is still a pretty good lunch for 560 calories. And they really scratch the itch for something a bit more decadent and indulgent. They are super crisp and bursting with flavor

Why not just weight the dumpling before and after deep fry for oil content?
i find it extremely hard to believe those are only 57 calories
I hate to say it but these absolutely aren’t 57 calories each.
I’ve been counting calories A LOOOONG time – Bread, Sausage and Oil are all high calorie options – you’re 100% miscounting something.
So you’re weighing the pan before and after the dumpling goes in and say this weighs how much oil is gone in to the dumpling.
However, as you also mention in the comments yourself the dumpling is losing water. Some of it in steam, but also in the pan itself.
So your end weigh now contains this water and therefor underestimates how much oil is gone.
Not to mention I find it hard to believe the dumpling by itself is only 42 kcal, but you could convince me with an itemized ingredient list.
