
I sort of used this recipe, but I measure things with my heart, so not exactly. I had a ton of cubed watermelon rinds, so I sauteed that and added onions, jalapenos, garlic, ginger, fish sauce, green onions, spinach, and chicken broth. You can add pork, Asian meatballs, or shrimp (my choice) for protein. One bowl was only about 150 calories (estimated), and I had some Costco spring rolls to go with it. It's so flavorful and fragrant!
