Dinner: Homemade burrito bowls. Lentils with taco spices, red rice, corn and jalapeño salad, roasted peppers and onions (I used a wok to get some amazing char on these. A well-seasoned wok also allows one to use less oil. I only used 2 teaspoons for the whole pan!), lettuce (kind of hard to see but it’s there!), fresh avocado, grilled chicken breast, and feta (standing in for Cotija). Toasted carb balance tortillia. Jalapeño lime cilantro yogurt sauce. 912 calories (including yogurt sauce)
