I used a recipe for protein pancakes, which I will try to link, but I'm on mobile, so it will work if the reddit gods smile on me. https://recipiana.com/greek-yogurt-protein-pancakes-180-calories-17g-protein-recipe/
I'm pretty sure her math is wrong, so ignore that. I used 1/2 cup white flour, 1/2 cup oat fiber, and added 1 scoop (35g) muscle milk chocolate protein powder. I left out the honey and used monk fruit instead. For the milk, I used 1/2 cup skim, and 1 cup Dannon plain nonfat yogurt, plus 1 egg. Since I added protein powder, the batter was a bit dry, so I added about 1/2 cup of water.
My math is coming out to 602 calories for the whole batch, and 44g protein. It made 10 pancakes, so only 60 calories each?? Does that seem right?
