    Olive oil (to coat pan)

    1 Tbsp tomato paste

    Dash red pepper flakes (to taste)

    1 Tbsp whole cumin seeds

    1 large red onion, finely diced

    4–6 cloves garlic, finely diced

    1 Tbsp water

    Salt, to taste

    1 Tbsp ground cumin

    1 Tbsp smoked paprika

    2 Tbsp ground coriander

    2 Tbsp garlic powder

    2 Tbsp onion powder

    ¼ cup tomato sauce

    2 large tomatoes, quartered

    4–6 eggs, separated

    Crumbled feta cheese, to taste

    Fresh cilantro, chopped (for garnish)

    Instructions

    1. Heat olive oil in a 12-inch pan. Add tomato paste, red pepper flakes, and cumin seeds; fry until fragrant.

    2. Add onion and garlic; stir and cook covered with 1 Tbsp water until onions are translucent.

    3. Stir in salt, ground cumin, smoked paprika, coriander, garlic powder, onion powder, and tomato sauce.

    4. Add quartered tomatoes; cover and cook until soft. Mash and mix into sauce.

    5. Add egg whites; cook until halfway set, stir in, then smooth mixture and make wells for yolks.

    6. Sprinkle feta evenly. Place yolks in wells; broil until yolks develop a thin skin and wrinkle (watch closely some broilers will overcook the yolks in under 1 minute).

    7. Remove, garnish with cilantro, and serve with toast or rice.
