Vegetables roasted were sweet potato. Onion. Garlic. Celery. Yellow pepper. Carrot. Puree all the vegetables with lemon grass. Ginger. Chilies. Curry spices (I used a paste). Lemon rind and juice of half lemon. Cilantro. Seared the shrimps with garlic leon and butter. Served over jasmine rice.
