I actually need to track my meals some how and love to stay accountable. Today’s meals were actually around 1230 calories. I’m surprised about how full I feel knowing I ate really well today.

Breakfast/Lunch – ~555 kcal
• 4 medium eggs – ~270 kcal
• Half a pack of smoked salmon (~50g) – 115 kcal
• 2 quinoa crispbreads – 50 kcal
• Veg medley: 125g tomatoes, 45g mushrooms, 80g spinach, 1 scallion – ~60 kcal
• 1.5 tsp avocado oil (for eggs + scallions) – ~60 kcal

Dinner – ~600–620 kcal
• 2 medium roasted chicken thighs, skin-on – ~380–400 kcal
• 150–180g baby potatoes – ~110–130 kcal
• 200–250g baked veg (courgette, peppers, onions, tomatoes, chili) – ~70 kcal
• 1 tsp oil for roasting – ~40–50 kcal
