I realize the enchilada sauce isn’t the most aesthetic in the photo, but this meal was satisfying! I seasoned the beans, cauliflower, and chicken with garlic powder, dried minced onion, chili powder, cumin, cayenne, paprika, and salt. I don’t count dried spices in my calories because I figure that the weight of them is factored into the weight of the seasoned item—in other words, say the spices add 2 grams of weight to the chicken, 2 grams of chicken is more calories than 2 grams of the spices, so it all evens out in my mind.
