Tried something with this chickpea mac and cheese I sometimes get from Aldi.

Prepared the mac & cheese as directed on the box (minus the optional butter), and when adding in the milk and cheese mix I also added the following:

  • 60g cooked lean ground beef
  • 1/4 tsp each of: onion powder, garlic powder, chili powder, cumin, smoked paprika, crushed red pepper flakes
  • a little bit of chopped cilantro

Turned out even better than I thought it would.
You can obviously tweak this too to your own liking, using a leaner ground beef or more/less of it.
I just used the rest of the prepared ground beef I had that needed to be used up.

Whole plate including the veggies and nonfat Greek yogurt ranch came out total to 419kcal with 31.3g protein.
My serving size of the taco mac and cheese was half the amount of what the whole box makes.
