I made a batch of bacon cheddar ranch chicken salad (Sassy Scotty copycat from Chicken Salad Chick). Instead of mayo, I use cottage cheese. I buy pre shredded rotisserie chicken and use half of the container at a time (about 8oz). Throw everything in a mixer for a minute. This recipe yields about 2 cups total, which is more than I can eat at one time. I eat 1/2 the batch at a time, but included the macros for both the full batch and half batch. 35g of protein for just half!
