This is gorgeous! What herb do you have in there?

This is very close to Poisson Cru, a dish they serve in Tahiti. Your salad has the same tropical vibes!

I make something similar that pairs so well with salmon (baked with soy sauce, honey, sriracha and lime). I deseed and chop up some cucumber, then add diced ripe mango and finely chopped red onion. Then a bit of lime juice and cilantro. Serve with rice. Sooo delicious!

I make a similar salsa with cucumbers, mango, lime, red onion, cilantro (optional).

  4. If you’re looking for an interesting new way to “cook” your shrimp, you’re like 90% of the way to ceviche. 🙂

I love putting mango in mine as others have suggested, but pineapple is also awesome.

Edit: I just saw the “poisson cru” comment and ceviche doesn’t use coconut milk which, as far as I know, is the main difference.

Years ago, I was at a summer buffet party and tried a peach, onion and cucumber salad for the first time. It sounded so weird I had to give it a try and couldn’t believe how delicious it was. I never tried to replicate it- I don’t know why. But I’ve always felt cucumbers are so versatile and never really get enough love.
