“Chimichurri” potatoes with chicken and kale – I know this doesn’t look like much but it is so flavorful and so filling. I took all the herbs growing in my garden, basil, dill, cilantro, parsley and green onion, and mixed them with some boiled potato and olive oil. Served over sautéed kale and topped with half a chicken breast. Absolutely delish.
