This tofu and farro meal is my lunchtime meal prep for the week. The farro is easy to make and I like it reheated or at room temperature. The recipe from Smitten Kitchen* yields 4 huge servings. I ended up portioning it out for 5 servings, but I didn’t bother to recalculate the calories. I tracked my meal with the 4 serving yield.
The baked tofu was dipped in yogurt that was (flavored with salt-free poulty) and then coated in a mixture of plain bread crumbs and onion soup mix.
