

- 2 eggs
- ¾ cup (180 g) Greek yogurt
- 1 tsp baking soda
- 1 tsp stevia (or your favorite sweetener)

½ tsp coconut oil (for greasing)

Separate the egg whites and yolks

Mix yolks with yogurt, stevia, and baking soda

Beat egg whites to stiff peaks

Gently fold the whites into the yogurt mix — don’t overmix

Grease your baking dish with a little coconut oil

Pour the batter in and smooth the top

Bake at 320°F (160°C) for 30–40 minutes until puffed and golden

Let it cool before slicing — the texture is soft and fluffy!
