I know low fat cottage cheese is already fairly high volume. But despite this I find myself eating multiple containers because I love it so much. So this lets me eat more of it for a little less calories and some fiber.

Ingredients:
450 grams cottage cheese(I used good culture)
1 pack miracle noodle brand konjac rice(2.5 servings)
Salt

Instructions:
Wash konjac rice thoroughly until smell is gone and either lightly squeeze until not wet or dry fry on stovestop. Then in a mixing bowl mix rice and cottage cheese with a pinch of salt.

Bonus tip:
Crack pepper on top of cottage cheese as you eat for bonus flavor.
