I cooked the cottage cheese in the oven at 400° for 12 minutes to make it more like a feta cheese texture. I used a melon baller to scoop the fins and a little of the flesh out of the mushrooms and then stuffed the portabellos with the sauce, cottage cheese, veggies, chopped up meatball, and topped with the mozzarella. Cooked the whole thing at 400° for 16 minutes. Very satisfying! Celery sticks were my side dish, and the psyllium and airborne for a beverage.
