For the base, I just sautéed some onion, carrot, jalapeño and garlic in water. Then I added some vegan bouillon, chilli powder, paprika, guajillo pepper and cumin along with some more water and some riced cauliflower. I covered it with a lid and let it steam until the cauliflower is tender. Then I drizzled it generously with cholula hot sauce. It’s topped with a homemade black bean burger and some microwaved tortilla “chips”.

The portion was HUGE, I could barely finish.
