For the deconstructed stuffed pepper, I sauteed one diced poblano pepper in a tiny bit of canola oil spray with salt and pepper for about 12 minutes and then served it on top of one serving of cottage cheese with some hot sauce. For the fries, I seasoned and air fried half a sweet potato. The ranch is two tbsp of fage 0% yogurt with water mixed up until it reaches a ranch consistency and then added ranch seasoning to taste. I hate plain raw veggies so I added a bit of Trader Joe's green goddess seasoning on top. Such a filling and satisfying dinner for 20g of protein and under 400 calories!
