  1. Here are the recipes:

    [Alexandrian Koshari](https://cheznermine.com/2024/08/12/koshari-iskandarani/)

    [Egyptian Salad](https://cheznermine.com/2022/08/04/salata-baladi-easy-egyptian-salad/)

I used [Wunder Eggs](https://www.reddit.com/r/vegetarian/comments/1ik3u73/wunder_eggs_vegan_hardboiled_eggs_rainbow/) for the hard-boiled eggs.

If you’re a fan of Indian food and this seems a bit familiar, that’s because koshari was inspired by [khichdi](https://en.wikipedia.org/wiki/Khichdi_(dish)), which was brought to Egypt by Indian workers. The Alexandrian variety is much closer to the original dish compared to the regular Egyptian koshari.

Here’s one of my favorite ways to make khichdi:

    [Masoor Dal Khichdi](https://www.reddit.com/r/vegetarian/comments/gqmutb/masoor_dal_khichdi_indian_lentils_rice/)

  2. I saw your post yesterday about the Wunder eggs. How are they? I was thinking about ordering the deviled eggs. I gave up eggs at age 9(46 now), but I still miss my mom’s deviled eggs.
