

I'm back with more mini baked 125 calorie cheesecake! My neighbour dropped off a big basket of fresh mulberries from her tree, so I adapted my favourite baked cottage cheesecake
All ingredients just blend together, and bake for 20 minutes at 190c. I normally divide it into ramekins for individual servings
- 300g Greek yoghurt
- 100g cottage cheese
- 2 eggs
- 30g (2tbsp) corn starch
- 60g erythritol (or whatever sweetener you like)
- 1 cup of mulberries (I left some aside to cut up and mix through and some were blended in)
It's amazing. 125 calories per serving (makes 6)
