I am positively addicted to zucchini for breakfast. I’ve been eating it multiple times a week alongside of whatever else. In this case, an omelette. Often with eggs over easy and chicken sausage. If you haven’t tried it, give it a shot. A bit of salt and other seasonings in a skillet and it is just incredible.
