I have a little 1.5 cup rice cooker and I've discovered that you can actually cook so much in it! Case in point, this soothing little thing.

The meatballs:
– 50g kangaroo mince
– 7g GF breadcrumbs
– 3g Psyllium husk
– 1/2 Egg white

Threw them in my pot with 25g (dry weight) rice vermicelli, a couple of button mushrooms, a splash of soy sauce, and threw in a little spinach towards the end.

Best part is that I can eat straight out of the rice pot so there's no washing up 🥰
