478 calories for my big bowl 🙂 I used half the bag of Mexican street corn salad and half of 11.52 oz of chopped sweet potato roasted with 1 teaspoon of olive oil. I made my own dressing using Bolthouse ranch and elote seasoning. I also added a bunch of fixings like rotisserie chicken and pickled red onions, and it was super good! If you can spare the calories, I think hard boiled egg or avocado would also work really well.
