meet my favorite meal prep. a yummy quick lunch. a tangy, flavorful side dish. an obsession in my friend group and quite possibly responsible for my social standing and success in life so far. this bangin’ stuff gets better throughout the week and has all the colors, so you know it’s #health. makes 15 one-cup servings (good luck eating just one at a time). 200kcal on the dot the way I make it, but super customizable—a true “kitchen sink” dish that i swear almost anything tastes good in. and yes, i’m eating it out of a golden bowl, because this pasta sally deserves it. 🥗 swipe for recipe!

RECIPE! ⬇️
ingredients:
– 1 box tricolor rotini, cooked slightly al dente(can also use Barilla protein pasta for a slightly more filling version)
– 1 green bell pepper, diced
– 1 small red onion, finely diced
– 1 pint cherry tomatoes, diced
– 2 large carrots, grated
– 1 smallish head of broccoli, chopped into very small florets
– 1 can red kidney beans (16oz), drained and rinsed
– 1 can pinto beans (16oz), drained and rinsed
– 1 big handful fresh basil, chopped
– 5-6oz feta, crumbled or cubed
– dressing (combine in jar, shake, pour):
– 1/4c EVOO
– 1/2c red wine vinegar
– generous splash balsamic vinegar
– salt
– pepper
– 1tsp dried oregano
– 1tsp garlic powder
– 1tsp onion powder
– 1tsp crushed red pepper (less if you’re spice-sensitive)
stir everything well. taste test and follow your heart w/ herbs, spices, dressing—sometimes ya just need to add a little something here or there. do what feels right. cover and refrigerate for at least 2 hours (if you can wait) to let the flavors mingle. i like to serve with a little extra salt and shredded basil.
What is EVOO?
Looks and sounds fantastic! I haven’t had pasta salad in ages and that’s about to charge!
I’d eat 2 cups but 400 cal isn’t terrible for lunch IMO

Have you ever tried snap peas in this?
Breath gonna be kicking after raw onion but worth it!
Omg THANK YOU. My kids are gone for part of the summer and I was worried I’d end up eating like shit with them gone but I’m making myself this and just sticking with it haha
That’s quite the winning advertisement! I’m sold.

I envy so much when people can make their food look SO good!!! Rainbow in a bowl, amazing job 👏 Thank you for the recipe, need to try this
Gorgeous pasta salad with tons of color and fiber! Saving this one as well.
Looks delicious! I love me a filling pasta salad for lunch
This is awesome!
I do a similar one! But I add canned garbanzo beans and kidney beans. Instead of feta I add cubed cheddar cheese☺️
For another similar pasta salad I do a bit of pesto, diced bell peppers, broccoli, cheddar cheese, muenster cheese, and some cut up turkey and ham cold cuts.
Omg this looks so good! I’m not doing dairy rn so I’m going to experiment with some swaps for the cheese, but this otherwise seems like the perfect summer meal!!!
This looks amazing! I’m on the search for grab-and-go recipes to make while we are vacationing with family soon.
Ohh, that looks tasty!
I’m living pasta salads and stuff for the garden this year. This was a nice find. Will add it to the rotation. Thank you!
this is the kind of content we need more of in this sub! lol
thanks for sharing!
also how long will this last in the fridge?
Pasta salad is the BEST low cal lunch. I always keep a can of garbanzo beans around to toss in. To be lazy, light italian salad dressing works, but I always make a red wine vinaigrette.
I love me a pasta salad!!!!
I love it! I had a roommate who would make this with chickpea pasta from Costco and it always amazes me
Is the bowl food safe? And if so where can I get one?
Perfect summer dish, thank you for sharing! Will definitely be making this next week.
