This has been my go-to lunch for weeks now and I dread the day I get sick of it cuz it’s so easy and filling!

Recipe:

75g of sweet potato sliced thin and air fried for 15 mins at 370F (flip halfway). I spray a little olive oil and rub salt and pepper on each side first.

Half an avocado mashed up with a small dollop of Greek yogurt, half a lime juice, salt and pepper and garlic powder. Add diced onions.

Two scrambled eggs with a quarter cup of cottage cheese mixed in.

Layer it and sprinkle with red pepper chili flakes.

Yum!

    Would you mind sharing what kind of air fryer you have? 🙂 considering buying one given all the love i see in this sub but don’t want to overspend if I don’t need to! Also don’t mind spending if that’s what’s necessary… I know nothing about the air fryer market lol 😂
