    Ingredients

    •2 cups spinach

    •2 Eggs

    Directions
    Add spinach and eggs to a blender and mix until smooth. Over low heat in a nonstick pan (add cooking spray if needed) add spinach and egg mixture to the pan and spread the batter around the pan. Cook for 1-2 minutes until bubbles start to form at the bottom of the tortilla and it starts to release from the pan. Flip tortilla and cook for 30-45 seconds and remove from pan. Let cool and enjoy

  2. Make sure r/keto knows about this. Ever try it with originally frozen spinach? I wonder if defrosting would be enough or if I’d have to cook first to get out some of the moisture
