Seitan recipe (ingredients in the 3rd picture, you can use any type of beans):
Combine all ingredients EXCEPT vital wheat gluten in a blender. Include the liquid from the beans too. Blend until smooth. Put the gluten in a bowl and pour the wet ingredients into it, mix until it forms a dough. Turn it out onto a clean surface and knead for ~5min. At the end of the kneading I also like to twist it up, form it into a ball, and twist it up again a few times to give it a more stringy, meatlike texture. This should be somewhat difficult if you’ve kneaded it enough, it should have a very elastic texture at this point. Divide into three or four pieces and wrap tightly in foil. Steam for 2 hours, shred, and enjoy.
Makes 8 servings, each with 36g protein, 22g carbs w/6g fiber, 1.5g fat.
