I just got into this cheese about 5 months ago and dangg, it is impressive. I think it capture the essence of cheese flavor without the unique fermentation flavor from different climate region. Texture is what cloud are made of. It is a brand new cheese not traditional, ultra filtration, only take a few weeks to mature, very interesting type. Also, you gotta try St Angel from them, which is the triple cream version… it is beyond indulgence

Ah, it’s one of my favorites. If you like this one, try Le Campagnier, by the same creamery. It’s even more buttery and creamy!

Have you tried it with Divina fig jam? I remember I ate a quarter wheel by myself with chunks of Divina fig jam spread out on top, both at room temperature of course.

they also have a garlic and herb version of this cheese which i don’t see very often but is my favorite cheese of all time. if you see it definitely grab a piece!!
