I don’t have a specific recipe I follow but cauliflower tacos & pickled onions with a vegan avocado crema. Heaven!
Wow. This is awesome, reminds me of a ratatouille
I just cook up zucchini, squash, onion, bell peppers, and sometimes mushrooms in a skillet with a dash of olive oil. Season with salt and pepper. Super delicious.
