




Just wanted to share this. A friend of mine gave me a print out of a booklet he had and this recipe was in it. The booklet is called “Trust the Skinny Chef – 60+ Macro Friendly Recipes and More”. Not all of the recipes in there are bangers or ideal for me right now but I really liked these pancakes.
So I’m going to post a photo of the recipe *but it warrants some explanation!!* They don’t tell you *how* to make it, and I made some slight modifications to the recipe to make it better, texture-wise (in my opinion of course…I know everyone has different preferences!)
*Some notes:*
– So first of all, the macros listed on the recipe page are for ONE serving. This recipe gives ingredient amounts that make 2 servings. If you’re only feeding yourself just cut the amounts in half (like I did on the last picture.) I suppose you can also quarter it too if you only want it as a snack or something!
– My local grocery store was sold out of the non fat cottage cheese so I had to get 2% milkfat. So the data I shared on the last picture is for 2%. You can use 0% fat if desired!
– I use micellar casein as my protein powder. I have tried making pancakes with only whey isolate and it wasn’t great. It was rubbery. So I do recommend investing in a container of casein if you can afford to do so. It’s perfect for baking!
– You can also do a 50/50 mix of whey/casein (which is what I did one time I made these and it wasn’t bad. Those pancakes are pictured with the blackberries on top in my photos!)
– The casein-only, whipped egg whites pancakes are the first photo! (Now you see why I whip some of the egg whites!)
– My data on the last pic is for 1 serving. I put most everything in grams or mL where possible since that’s more accurate.
*How to make:*
1) Take the total amount of liquid egg whites and subtract the weight of one egg white from an actual egg. Keep the “real” egg white separate and then I whip it up until I get barely stiff peaks. *Keep it separate until the very end!!*
2) Take all the dry ingredients and mix those together in 1 bowl.
3) Take all the other wet ingredients (but NOT the whipped egg white) and dump those into a blender.
4) Blend the wet stuff together until well mixed.
5) Now GRADUALLY add your dry ingredients a little at a time and blend between each addition. This ensures a smooth mixture with no lumps!
6) Once that’s all mixed together, transfer it to a bowl.
7) Now take a flat, flexible, silicone type of spatula and gently fold your whipped egg white into the blended mixture. Don’t stir, just fold carefully!
8) Now get a hot nonstick skillet + matching lid ready on medium heat (this takes some guess work because everyone has a different stove. Mine is natural gas and it gets HOT.)
9) Pour in pancake batter. I usually make 2-4 small pancakes in 1 skillet but this is entirely up to you. I keep them smaller to hopefully prevent them from deflating.
10) Add in a teaspoon or two of water to the hot pan around your pancakes and put the lid on. Cook for a minute to three (or adjust based on your stove heat.) flip the pancakes and repeat the steaming process.
So yeah I know this is a ton of work, lmao. You DO NOT need to whip the eggs separately like I did. This is something I like to make on a lazy Sunday morning when I have plenty of time! You can most certainly just dump all the egg whites from a carton into the blender. I’ve made them that way and they’re still very good!
The only step you *shouldn’t* skip is slowly adding dry to wet in the blender. If you try to dump all in at once and blend, well, godspeed. 😂 I almost broke my Vitamix doing that the first time. Lol.

PS: As a heads up – These are great but they do taste a little “eggy” so definitely add the vanilla extract. Sometimes I get funky and add pandan extract. Or you can add cinnamon, lemon juice, or whatever tickles your fancy! 🙂 I dip mine in a mixture of maple syrup and pecan butter. (Very small amounts of those but microwaving it makes it more fluid.) I also make some compote from raspberries, blueberries or blueberries. Have fun with it!
