So, it’s 80 calories per 3.5 ounces, which is about 91 calories for 4 ounces. It’s lower than the fresh tenderloins, which are 110. Is that just due to the brine they add? And if so, wouldn’t it come out to 110 cal when I’m done cooking?
Sounds silly, but when I’m running I might eat to a pound of chicken a day, and those 20 calories add up.

Yep, you guessed it right. That weight will be lost once cooked.
it won’t go up to 110 kcal per portion that had 90 kcals in it before cooking, however due to the water evaporating the end product will weigh less and it will be more calorie dense. so the final kcal/100g will go up but the net kcal will stay the same since the weight of your food will go down – hope it makes sense!
