


I used the pesto listed in the ingredients here to partially scramble the eggs and then to carmelize the potatoes and sweet potatoes a bit, then mixed everything in a casserole dish, topped it with a blend of cheeses, and baked it 30 minutes at 375(F).
It made 8 servings at 185kcal each serving.
Ngl, it’s a little bland for what I’m used to, so I’m probably going to add a bit of salsa or hot sauce, and next time I make it, I’ll add more/better seasonings.
That said it wasn’t entirely bland, it was actually tasty, just a little mild, and it was definitely filling, Very… meaty? Umami? so although I had planned to add a bit more fruit and a slice of toast or a bagel thin, I didn’t need to. This will be my breakfast with various additions through this week. Also having a breakfast blend kcup, so my calories for the morning will be at 230 for today.
