

Not much of a recipe, but my typical “salmon dinner”. I find it very voluminous! Very basic. Protein, starch, veggie. Salmon, broccoli, and mini yellow potatoes. Comes together quickly!
I get frozen salmon and take one fillet out of the freezer the night before. Steam the potatoes in the microwave, then add to cast iron skillet with salmon, drizzle with olive oil and cook 425 for 5 min, broiler high for 2 min. Broc gets crispy in the air fryer with no oil. The spray butter makes the potatoes super rich for fewer cals (if you like the flavor).
I typically aim for 400ish cal lunch, 200 cal snack, and save myself for a large filling dinner (500-600 cal). Save yourself some cals by skipping the olive oil. I genuinely don’t think it contributes a ton to the meal. I sometimes skip and replace those cals with a late night mini bag of microwave popcorn.
