2. Separately, pan fry veggies (except tomatoes) with garlic
3. Combine everything and stir in vinegar and soy sauce, tomatoes, and cilantro
Typically lomo saltado is served with fries (according to the internet), so you could still do that since this is low calorie.

This looks bomb af. I can tell you cooked it really well too (onions are properly browned, peppers not mushy)
I never really make anything I find on these subs myself but I’m actually going to try making this.

Hey! Peruvian here and this looks amazing!! I used to enjoy this dish sooo much when I ate beef, I’ve never tried to make it with beyond meat but definitely adding it to the list. Just an extra tip, if you can find Ají Amarillo by Incas Food in any of your local grocery stores, a little spoonful in your seasonings really kicks the flavor up a notch!
