This kind of reminded me of tuna salad sandwiches but better and without the fishiness.
Chickpea sandwich filling – makes four sandwiches
* squeeze of ½ lemon
* 239 g chickpeas
* 57 g chopped celery
* 1 T relish
* 3 T low calorie vegan mayo
* 2 T dijon mustard
* 1/8 c chopped red onion, reserve some for sandwich layering
* 16 g of scallions, chopped
* shake of onion powder
* ½ tsp fennel seed
* 3.5 tsp sweetener (adjust for taste)
* 1/8 tsp salt (or more, taste it)
* ground black pepper
* pinch of red pepper (optional)
* optional – dash of turmeric for color
* optional, you could add crunchies like sunflower seeds or pepitas, but would increase cals
The rest of the sandwich: 647 low cal bread (80 calories for two slices)/ onion / tomato / avocado (26 g) / lettuce
and Tostitos bite size chips
