
Not gonna lie, I was expecting failure. I've half ass tried once or twice and had crappy results. This is the first little piece that I actually put some TLC in to and was expecting browning/discoloration and case hardening. To my surprise when I took the collogen wrapper off and cut in, ITS GREAT!!! Looks, smells and tastes great!!! I'm so stoked and having a lot more confidence that my copa is gonna turn out well. This was a random small muscle of a butt that I thought ide experiment with.i did complete seasoning dry rub brine with no nitrates just 3% salt and black pepper and fennel seed with collogen wrap and stretch netting in a mini fridge with no humidifier or humidity control. Took 2 months. I think by time to bigger copa finishes it'll be in there for at least 3 months. The last two half-assed attempts had no rapper or anything, just brined and left on wire rack in the mini fridge and turned out bad, lots of case hardening, lots of discoloration. So at the moment I'm a big fan of the collagen wraps. They definitely worked
