
this is my favorite breakfast! this recipe works with egg whites or whole eggs, tonight i used whole eggs.
-3 eggs (whole or whites) whipped in a bowl
-one clove of fresh minced garlic
-2-3 cups of packed baby spinach
-1/4-1/2 cup of cooked quinoa (adjust based on hunger!)
sautee the garlic over medium heat in evoo until fragrant (about one minute)
toss in the spinach and sautƩ until wilted
add in whipped eggs, stirring until almost set
add in cooked quinoa; mix until incorporated; season with maldon salt and freshly ground black pepper to taste; serve immediately.
