I've been making this for many years, just figured I would upload it because it is one of the best vegan recipes you can possibly make.

You dip it in either sriracha or soy sauce and I eat these until my belly is stuffed 🙂

Recipe:

  1. cut sweet potato into wedges and bake until tender
  2. cook rice, add rice vinegar
  3. lay rice out on nori, add potato, add avocado
  4. cut in half to make two sushi half-burritos
  5. eat as many as your belly will allow
