













Hey guys. This is a recipe I’ve been dialing in for a while and tonight I think I finally nailed it.
I started by browning the beef hard to build up as much crust and flavour as possible
and then rendered the fat down and used it to slowly fry heavily salted onions low and slow until they turned sweet,soft and jammy. After that I bloomed all the spices and tomato paste together with the onions along with some chipotle paste.
The beef went back in with chipotle paste and stock
and then I then reduced it down until it turned into a beautiful consistency. I used the leftover drippings to make a homemade consomme with stock, Worcestershire sauce, more chipotle and lime juice and a tbsp of the beef mixture. I then reduced it for around 25 minutes until it was nice and smoky and perfect for dipping.
To finish the tacos, I fried soft tortillas directly in a couple tablespoons of the consommé, loaded them up with a cheddar and mozzarella mix and the beef, folded them over, then crisped both sides until golden and crunchy.
I then finished it with a natural yoghurt,lime and black pepper sauce and fresh diced white onion.
Took about 4 hours start to finish but honestly worth every minute.
